Grape vines have been cultivated at Cabrol since the
16th century. Situated at an altitude of 300 meters, on the hills
overlooking the "Cité" of Carcassonne, the Domaine is the highest
within the Cabardès appellation.

The
Domaine entails 130 hectares of which only 21 are cultivated.
Forests and "garrigues" make up the major part and separate the
vineyards. This natural separation keeps the vines in the best of
health. Each grape variety is planted where it can best flourish on
those plots of land or "parcelles" with the most suitable exposure,
soil composition and moisture. In fact each "parcelle" has its own
micro-climate. The quality of Cabrol wines is primarily due to these
unique characteristics of the Domaine.
