This is a
small kingdom within the confines of the Black Mountain where the
soft and cool Atlantic winds blend with the heat of the
Mediterranean sun. A place which has seen both the passions of the
Cathares and the courtly love of the Troubadours. It is where the
winds of the East and of the West meet.
One
brings the heat required by the meridian grape varieties while the
other brings the moisture from the Atlantic allowing the Cabernet
and Merlot grapes to flourish. Moreover this mixture of winds and
climate creates a unique mixture of Atlantic and Mediterranean flora
throuhout the Cabardès countryside.

It is the welding of Atlantic (Cabernet Sauvignon, Cabernet
franc, Cot, Merlot and Fer Servadou) grape varieties with those of
the Mediterranean (Syrah and Grenache) which gives its unique
character to the Cabardès wines.
Here is what Jean-Pierre Hiradakis of the renown restaurant
Tupina in Bordeaux says about Cabardès wines :
" The principal quality of these wines is their remarkable
balance between "body" and fruit. During blind tastings I often slip
some of my favorite Cabardès amongst much more prestigious wines.
The Cabardès often emerge amongst the top
choices."
