
Grape harvesting is done
by hand and takes usually place between the first and the 25th of
October. The winemaking is either by traditional methods or by
carbonic maceration - depending upon the grape variety.
Red Wines
Cuvée Vent d'Ouest (West Wind) AOC Cabardès
Grape varieties :
Cabernet Sauvignon, Grenache and Syrah.
This wine is dark and
concentrated with a subtle touch of elegance. This is a wine to
"cellar" for 10-20 years. However it may already be greatly enjoyed
after 3-4 years.
Cuvée Vent d'Est (East Wind) AOC
Cabardès
Grapes varieties :
Syrah, Cabernet Sauvignon and Grenache. The proportions of
the grape varieties as well as their "parcelles" are different from
the cuvée Vent d'Ouest.
This is a wine with an
intense bouquet which fills the mouth with deep fruit flavors. A
balanced and elegant wine which may be kept for 15-20 years, but may
also be enjoyed at 4-5 years of age.
Cuvée La Dérive AOC Cabardès
The
tasting : All is organised, all is harmonious in this
wine. After two years kept in wooden barrels, there rests a hint of
vanilla and toasting in the wide palette of healthland, black
olives, laurel, spices and dark fruits: It's a real mediterranean

As the tannins are
very fine and dense, this wine can be drunk fairly young (at 3-4
years), but can also be kept for 15-20 years.
Cuvée Réquieu AOC
Cabardès
A wine made from fairly
young vines (Cabernet Sauvignon, Grenache and Syrah).
A fresh, fruity wine which
is easy to drink and may be kept for up to 5 years.
Rosé
wine
This wine is made from
Grenache Gris and Cabernet franc grapes. The bouquet of honey,
preserved fruit and cranberries evolves into a warm and elegant
taste with considerable length. It is a perfect companion for fish
and grilled meat.
White wine
Made from the traditional
grape varieties of the high Cabardès plateau, this wine surprises
with its powerful and unique bouquet; including mango and citrus
with a touch of rose petals.
